(A Breakfast Biscuit You Eat with a Fork)
The least little thing can bring back memories, food being one of many. Years ago, when I lived down the road from Sharon Blessing, a good friend of mine, she and I would have coffee and breakfast on Friday mornings, that being her day off. I babysat and cleaned houses at that time, so my schedule was very flexible. One of the children I kept was her grandson, so he and the other little ones I kept would ride the wheeler up to Sharon’s house with me. Aside from our breakfast dates, we enjoyed doing yard work, burning limbs, leaves, sharing recipes, planting flowers, fishing in her pond, and letting the kids play outside. She saved her magazines for me, and we would talk about big plans of what we wanted to do in the future. Not sure that any of those things ever happened, but oh well! They weren’t meant to. I remember those days being some of the best and I still to this day cherish Sharon as a dear friend. She listened to me fuss and I listened to her, and whether either of us could do a thing about the other’s problems, it was comforting having someone to simply listen. Sometimes, that’s all we need. Having an honest friend makes all the difference in the world.
On one of those Friday mornings we met for breakfast, Sharon cooked Corned Beef Hash from the can, it was my first time ever seeing this stuff. It looked like dog food, so I was hesitant about it, but let me tell you, I fell in love! From that day on, I buy it every so often and every time I eat it, I think of her.
You have to be patient and let it fry up crispy, it takes some time. Worth it. I like to eat it on a biscuit with mustard or just on the side with a fork. Our two boys love it also. Last time while shopping for it I found Roast Beef Hash, so I bought some and cooked it this past Sunday morning. You know those cravings you get sometimes for the messiest, greasiest, mile high pile of just, stuff? It was one of those mornings for me so let me tell you what I did with my biscuit and Roast Beef Hash.
Ingredients:
Biscuits, cooked.
1 can of Corned or Roast Beef Hash 1 fried egg, a little runny 1 slice of Kraft single cheese Mustard for taste Bacon on the side I cooked a common breakfast. Biscuits, bacon, and fried eggs. All you have to do to cook the hash, is spray or add a tiny bit of oil to a skillet, and heat up on medium to high heat. Pour the can of hash in and flatten it down. Let it fry. Let it fry. Let it fry some more. Flip it, and let it keep frying until crispy to your liking.
Time to build your plate. Open your biscuit, spoon the hash over both sides, drizzle with mustard (optional), half the cheese and place a half on each side, and put the hot fried egg on top. This is a biscuit that calls for a fork. When you cut into it, that yolk runs out, and the cheese is softly melted. Get ready for a good bite! It’s like biscuits and gravy, but here it comes, I’m going to say it. Better!
This is not fancy. This is messy. This is cheap. This is DELICIOUS! And yes, I’ll do it again one day. (I cannot make a habit of this) ha.
